Requirements/ Pre-requisites

  • Coffee roasting experience is required (minimum 12 months experience in commercial roasting)
  • Sound understanding of coffee roasting fundamentals (minimum 12 months experience as a home roaster)
  • Successful completion of The Roasting Club- Sample Coffee Roasting Fundamentals

Course Outline  

Advanced Roasting Theory:

Explore commercial coffee plant and equipment.

    • Introduction to commercial coffee roasting equipment and guided tour of our state-of-the-art roasting plant facility.
    • Explore advanced theories and concepts in commercial coffee roasting.
    • Dive deeper into the science behind roast development.
    • Understand the relationship between roast profiles and flavour development.

Roast Profile Refinement:

    • Explore roast profiles to achieve optimal flavour complexity and balance.
    • Learn how to achieve consistency and repeatability in roast profiles.

Single-Origin Emphasis:

    • Experiment in roasting single-origin/ estate coffees.
    • Explore different roasting approaches tailored to specific coffee origins, varietals, and processing methods.

Advanced Blending Mastery:

    • Master the art of coffee blending.
    • Experiment with various blend construction strategies to create signature blends with depth and complexity.
    • Learn how to balance acidity, body, sweetness, and aroma in blended coffees.

Sensory Analysis and Quality Assurance:

    • Improve sensory evaluation skills through various cupping score sheets- for example SCAA 2015 (Cup Ready), Cup of Excellence (COE) and World Brewers Cup Score Sheets.
    • Experience cupping sessions featuring a variety of coffee origins to develop your palate and sensory skills.  
    • Explore various sample roasters and run small batches of single origins for the cupping sessions.
    • Develop recipe protocols for rigorous quality control and assurance to maintain consistency and excellence in roast profiles.

Roaster Optimisation and Innovation:

    • Explore cutting-edge technologies and innovations in coffee roasting, such as data logging systems and roast automation.
    • Learn how to adapt to emerging trends and market demands in the coffee industry.
